This by far has been my favorite meal of the week. It looks innocent but has a hidden kick. Check out the recipe super easy and incredibly tasty. Feeds four.
- 1 Pound of Boneless Chicken Breasts
- 1 Package of Bacon
- 1 Package of Spinach
- 1 Box of Rigatoni
- 1 Bottle Hidden Valley Ranch
- 1 Bottle Frank’s Hot Sauce
Bacon Chicken
Cut the breasts into cubes about 1″x1″ and wrap with 1/2 slice of bacon. Place in a deep pan, then dump in water to fill up half the pan. Bake covered in the oven on 375º for about an hour. Double check and make sure the chicken is done as timing could be different on the size of chicken cubes you have. Once the chicken is done, I through the cubes in the skillet to crisp up the bacon and give it some color.
Pasta
Bring a pot to boil and cook the Rigatoni until it is tender. Check the box for specific details. Once it’s finished drain and add to a bowl. Mix in chopped spinach. Set aside.
Dressing
This is completely up to you, though I usually mix one part ranch to one part hot sauce. If this is too spicy, do two parts ranch to one part hot sauce.
When all three pieces are finished drizzle the sauce over the pasta and mix. Do not over saturate with sauce, just lightly cover the pasta. Serve into bowls or on plates, accent with four bacon wrapped chicken cubes.
Serve.
