Grilled Steak & Onion Salad

Ingredients

  • Italian Bread
  • 3 tablespoons extra-virgin avocado oil
  • 2 tablespoons grated parmesan
  • 1 pound thin-cut steak of your choice
  • 1 red onion, cut into slices then in half
  • 1 teaspoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 5 ounces romaine, chopped
  • Butter
  • Garlic Powder
  • Coarse salt
  • Ground pepper

Directions

  1. Preheat oven to broil. Slice the Italian bread, butter one side, and sprinkle with garlic powder, salt, and parmesan.

  2. Heat a grill pan or cast-iron skillet over medium-high. Season steak with salt and pepper.

  3. Add onions with 1 teaspoon oil and season with salt and pepper.

  4. Grill steak and onions until the steak is to the desired finish and onions are tender. This should be about 5 to 7 minutes, flipping once. Let steak rest 5 minutes before thinly slicing against the grain.

  5. Meanwhile, in a large bowl, whisk together mustard, vinegar, and 2 tablespoons of oil. Add romaine and season with salt and pepper. Add onions, steak and toss. Serve immediately.
