Ingredients
Marinade
- 1/4 cup avocado oil
- 2 tablespoons distilled apple cider vinegar
- 2 tablespoons fresh lime juice
- 1 1/2 teaspoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon ground black pepper
- 1 teaspoon Tabasco sauce
- 1 pound tilapia fillets, cut into chunks
Note: This marinade looks disgusting but mix it up and trust in the marinade.
Toppings
- Tostito’s tortilla chips
- Mini tomatoes, quartered
- Cilantro, chopped
- Romaine, chopped
- 2 limes, cut in wedges
- Shredded cheddar cheese
- Salsa
Directions
Marinade
- Mix together the avocado oil, vinegar, lime juice, honey, garlic, cumin, chili powder, seafood seasoning, black pepper, and hot sauce in a bowl. Place the tilapia and marinade in a ziploc bag. Let sit overnight.
Fish
- Preheat a grill to high and lightly oil grate.
- Remove fish from marinade and grill fish until easily flaked with a fork, turning once, about 9 minutes.
Assemble
- On a plate, place tortilla chips first, then fish then add desired amounts of tomatoes, cilantro, cheese, and romaine. Add salsa, if desired.
