Tilapia Nachos

Ingredients

Marinade

  • 1/4 cup avocado oil
  • 2 tablespoons distilled apple cider vinegar
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon Tabasco sauce
  • 1 pound tilapia fillets, cut into chunks

Note: This marinade looks disgusting but mix it up and trust in the marinade.

Toppings

  • Tostito’s tortilla chips
  • Mini tomatoes, quartered
  • Cilantro, chopped
  • Romaine, chopped
  • 2 limes, cut in wedges
  • Shredded cheddar cheese
  • Salsa

Directions

Marinade

  1. Mix together the avocado oil, vinegar, lime juice, honey, garlic, cumin, chili powder, seafood seasoning, black pepper, and hot sauce in a bowl. Place the tilapia and marinade in a ziploc bag. Let sit overnight.

Fish

  1. Preheat a grill to high and lightly oil grate.
  2. Remove fish from marinade and grill fish until easily flaked with a fork, turning once, about 9 minutes.

Assemble

  1. On a plate, place tortilla chips first, then fish then add desired amounts of tomatoes, cilantro, cheese, and romaine. Add salsa, if desired.
